Low cholesterol potato salad

You probably know this recipe in its original form - potatoes, eggs and mayonnaise that taken together create a true "cholesterol bomb", with 5mg of cholesterol per tablespoon of mayonnaise and 300mg per an egg. Here's how you can make the potato salad a truly low cholesterol recipe:

  • use only half the eggs you normally use for the salad, this will reduce the amount of cholesterol without changing the taste,
  • instead of mayonnaise, pour the yoghurt, which contains only a quarter cholesterol the mayonnaise have,
  • add fresh chive and onion to increase the amount of vitamin C and minerals, while making the dish even tastier.

These three steps will reduce the cholesterol intake three or four times without really changing your eating habits. It's a small, but important victory in your war with the high cholesterol level.

Deep-fried French fries

A common way of lowering the cholesterol level is decreasing the fats intake, and the most common way to do it is resigning from deep-fried food, especially the fries in favor of fries made in oven. The point is that, while oven-made fries are healthier than deep-fried ones, they still contain a lot of potentially dangerous heavier fractions of fats (they are heated much longer than deep-fried ones). Fortunately you can avoid this problem entirely by using a simple trick that will get rid of around 75% of fat from typical deep-fried fries.

Here's what you should do:

  • deep-fry your French fries just as usual,
  • when they are ready, put them for a minute on the greaseproof paper or parchment and let the fat simply drain off,
  • serve and enjoy.

This way you will (a) reduce the amount of fat intake without changing your major eating habits and (b) you won't endanger yourself by eating heavier and more dangerous fractions of fat from the oven-made fries.

Generally, recipes for low cholesterol diets are easily made of the normal recipes, as long as you actively try to eliminate the excess cholesterol from them. Remember that you don't really need to eliminate cholesterol from the diet, only to keep its level in check.
