Arthur Agatston, of Miami, Florida, developed South Beach Dietthe South Beach diet. Dr. Agatston is a cardiologist and an associate professor of medicine at the University of Miami Medical School. The diet was first published in a book, called the South Beach diet, published by Rodale Press.

What is the idea behind the South Beach diet?

The South Beach diet is not just a low carbohydrate diet. Instead, the South Beach diet advocates the choosing of the right carbohydrates, including whole grains and certain fruits and vegetables. The diet also encourages the consumption of the right fats, such as olive and canola oil. Finally, the diet encourages eating lean sources of protein.

What are the phases of the South Beach weight loss plan?

The South Beach diet follows a series of phases. Here's how each phase works:

  • Phase 1 is the beginning of the weight loss plan. In this phase, it is recommended that you eat normal-size portions of lean meat, fish, eggs, reduced-fat cheese, nonfat yogurt, nuts, and vegetables. Snacks and desserts are part of the plan as well. Carbohydrates are avoided in this phase.
  • Phase 2 allows the reintroduction of carbohydrates like whole grains and most fruits. Weight loss, which starts in phase 1, continues in phase 2. Phase 2 continues until you have reached your desired weight loss goal.
  • Phase 3 starts once you have reached your weight loss goal. This is the maintenance phase. Here you will continue the healthy eating choices you've learned in phases 1 and 2, and implement these choices in everyday living. At this point, the eating plan should feel more like a lifestyle than a diet.
